Leeks

(Allium ampeloprasum)

Producing year round, leeks are the ultimate substitute for both onions & garlic. Growing to a height of two to three feet, leeks do not bulb like onions, but the stalks of the plants create a substantial two inch diameter tight bundle of tender leaves. They entire stalk is consumed. Included in soups, stews, chile & countless other dishes, leeks impart a mild sweet onion like flavor with a hint of garlic. Although leeks are well known & widely used in Europe & many other parts of the world, for some reason they have never gained much popularity in the United States excepting with gourmet chefs. 

Leeks can be grown just about anywhere. They handle both cold & heat exceptionally well & survive both drought & flooding conditions without missing a step.

When given the opportunity leeks will naturalize. Simply allow enough of the plants to remain in the same location until their biennial requirement has been met & they will bolt, eventually dusting the ground around them with seeds. That being said, leeks are not considered invasive & will not spread very far from the original planting.

Leeks are not susceptible to many diseases or pest & tend to hold their own without intervention.
